Zucchini Bran Banana Bread


Ingredients:
1 c. sugar
2 T. margarine
1 egg
3 bananas
2 c. zucchini
1 T. milk
1/2 c. bran
1/2 c. nuts
1 c. white flour
1/2 c. wheat flour
1 t. baking soda
1 t. baking powder
1 t. salt

Bake at 350 degrees for 1 hour.

Grilled Glazed Drummies


Love this tasty recipe from this month's Taste of Home magazine!

Ingredients:
1 c. ketchup
1/3 c. soy sauce
4 t. honey
3/4 t. ground ginger
1/2 t. garlic powder
3 lbs. chicken drummettes

Directions:
1. Mix the first 5 ingredients to make your marinade. Add it to the chicken & refrigerate for at least 4 hrs.
2. Grill over medium heat for 15-20 minutes.

Easy Chicken Tacos

This is a perfect meal for one of those days that you only have 5 minutes. Throw it in the crock pot and forget about it until dinner time! Super easy & super tasty!

Ingredients:
4 frozen chicken breasts
2 c. salsa
2 T. honey

Directions:
Place the frozen chicken breasts in the crock pot. Cover with the salsa & honey. Cook all day on low. Prior to serving, use to forks to shred the chicken, in the sauce.

Healthy Pasta

Whatever kind of whole wheat pasta your family likes
1 Green pepper
2 tomatoes
1 can of olives
1 small onion
Garlic
1/2 of a Kilbasa Sausage
Parmesan Cheese

1. Cook however much pasta you need to feed your family.
2. Dice up half of the Kilbasa sausage
3. Chop up gr. pepper, onion,tomatoes and olives. Dice up Garlic.
4. Add sausage, gr. pepper and onion to pan. Saute until soft (about 5 min)
5. Add tomatoes. Saute couple minutes. Add olives and garlic. Saute another minute or two. Add dried basil at the end to taste.
6. Drain pasta, add veggie meat mix to noodles. Sprinkle with olive oil and cheese.

Asian Cabbage Salad

Depending on how many you are feeding will depend on how much of each ingredient you use, but here are the ingredients:
Cabbage
Bell Pepper
Grated Carrots
Almonds
Brown Rice

Asian Dressing (I used this one that I found on Allrecipes.com. You can use whatever you like. I liked this one because it had olive oil and honey.
Ingredients
• 3 cloves garlic, minced
• 2 tablespoons minced fresh ginger root
• 3/4 cup olive oil
• 1/3 cup rice vinegar
• 1/2 cup soy sauce
• 3 tablespoons honey
• 1/4 cup water

Directions
1. In a 1 pint glass jar or larger, combine the garlic, ginger, olive oil, rice vinegar, soy sauce, honey, and water. Cover the jar with a tight fitting lid, and shake well. Remove lid, and heat jar in the microwave for 1 minute just to dissolve the honey. Let cool, and shake well before serving. Store covered in the refrigerator.

Mix all the ingredients and add dressing to your liking. Delicious!!!

Healthy Carrot Cake

I found this recipe and made a few changes and made them as muffins instead of cupcakes or cake. * Are my changes

1-1/2 Cups Grated Carrot
1 Cup Flour * Whole wheat flour
1 Cup Sugar * Instead of refined sugar I used: 1/4 c molasses,1/4 c. Agave, 1 Tbsp Stevia
1 tsp Baking Soda
1/2 tsp Baking Powder
1/4 tsp Salt
1 tsp Cinnamon
3/4 tsp Ground Nutmeg
1/2 tsp Ground Cloves
1/4 tsp Ground Ginger
4 Eggs
1/3 Cup Sour Cream * Fat free sour cream
1 tsp Vanilla
1 1/2 tsp Grated Orange Zest (I did not put)
4oz Crushed Pineapple with Juice
1/2 Cup Chopped Walnuts
1/4 Cup Golden Raisins * Regular raisins that I soaked for about 10 minutes in hot tap water and 1 Tbsp Vanilla

Cake Directions:

Preheat oven to 350 F. Spray 8" cake pan with baking spray (has flour in the spray). Mix flour, sugar, baking soda, baking powder, salt, and spices. Stir in grated carrot.

Beat eggs, oil, vanilla and orange zest together. Add to dry ingredients, just until the ingredients come together. Stir in pineapple, walnuts and raisins.

Pour into prepared cake pan and bake for about 40 minutes. Cool in pan for 10 minutes, then remove to a cooling rack; let it cool to room temperature.

Individual German Apple Pancakes

Ingredients:
2/3 cup flour
2 Granny Smith apples, peeled, cut into pieces (about 1 pound)
3 eggs
1/4 cup, light brown sugar
5 tablespoons granulated sugar plus more for tin
1/2 teaspoon cinnamon
2 tablespoons unsalted butter
1 tablespoon lemon juice
3/4 cup whole milk

Directions:
1. Preheat oven to 450 degrees. Brush melted butter inside each muffin cup; coat with granulated sugar.
2. Peel, core,and slice each apple into twelve wedges, then cut each wedge into three pieces.Toss with brown sugar, cinnamon, and lemon juice.
3. Melt 2 tablespoons butter in a 10-inch nonstick skillet over medium heat.Add the apples and saute, turning occasionally, for 10 to 12 minutes, until caramelized. Remove pan from stove; let cool 5 minutes. Divide the caramelized apples among the muffin tins.
4. Place flour, salt, granulated sugar, melted butter, eggs, and milk in the bowl of a food processor. Process for 3 minutes.
5. Pour batter over apples. An adult should place tin in oven and lower heat to 400 degrees. Bake 15 minutes. Pancakes will puff up during last 5 minutes of baking.
6.Take tin from oven and turn it over on a flat surface to remove pancakes. Dust with confectioners' sugar.
