Vegan Coconut Chocolate Chip Cookies
3 bananas, mashed
1/4 c. coconut oil, warm
1/2 c. applesauce
1 t. vanilla
1 t. cinnamon
1/2 t. salt
1 c. unsweetened coconut flakes
1/4 c. almond meal
1/4 c. ground flax seed
1/2 c. chopped walnuts
1 c. dark chocolate chips
1 1/2 c. rolled oats
1. Preheat oven to 350 degrees.
2.In a large bowl mash the bananas with the oil, applesauce, vanilla, cinnamon & salt.
3. Add coconut, almond meal, flax seed, walnuts, chocolate chips and oats. Stir to combine.
4. Drop spoonfuls of dough onto a cookie sheet. Bake for 15-20 minutes.
