Garlic Rosemary Roasted Potatoes
Ingredients:
2 lbs. small/young potatoes, washed & cubed
2 T. olive oil
5 cloves garlic, minced
2 T. rosemary
Salt & Pepper
Zest of 1 lemon
Juice of 1 lemon
Directions:
Combine ingredients in a bowl & pour over the potatoes. Toss to coat evenly. Roast in 400 F oven for 40 minutes or until golden brown.
