Ingredients:
2 1/2 c. steel cut oats
7 c. water
3 c. coconut milk
1/4 c. brown sugar
1 t. cinnamon
2 T. coconut oil
1/4 t. salt
2 t. vanilla
Directions:
1. Combine everything except the vanilla in a large crock pot. (I recommend using a crock pot liner for easy clean up)
2. Cook on low for 8 hours. Stir in vanilla after cooking. Serve with dried fruit & coconut. (Chopped dates are delish with this!)

Chicken Tortilla Soup
Soup Ingredients:
8 c. chicken broth
1 can diced tomatoes
1 onion, chopped
1 bell pepper, chopped
4 cloves garlic, crushed
1 t. cumin
1 t. chili powder
1/2 t. kosher salt
Black pepper
2 cans black beans, rinsed & drained
1 recipe grilled chicken
5 green onions, chopped
1/4 c. fresh cilantro
Chicken Ingredients:
4 chicken breasts
2 T. lime juice
2 T. red wine vinegar
1/4 c. canola oil
3 cloves garlic, crushed
1/2 t. cumin
1 t. chili powder
1/2 t. kosher salt
1/2 t. black pepper
Directions:
1. Combine broth, tomato, onion, bell pepper, garlic, cumin, chili powder, salt & pepper in a crock pot.
2. Cook on low for 8 hours or high for 4 hours.
3. Marinade the chicken, and grill just before serving.
4. Add the beans and hour before serving.
5. Chop the grilled chicken, and add it to the soup with the green onions & cilantro.
Serve with shredded cheese, sliced avocado, lime wedges, and tortilla chips.

Crock Pot Indian Lentils
I took a couple versions of this recipe and combined them, and added some more ingredients (like garam masala). It makes your house smell so good, and made for a delicious vegan meal served on top of a bed of basmati rice.
Ingredients
2 c. lentils
10 oz. spinach
1 (15 oz) can diced tomatoes
1 onion, diced
1 T. crushed garlic
1 T. grated ginger
4 c. vegetable broth
1 T. curry paste
1 t. whole mustard seed
1/2 t. ground coriander
1/2 t. ground cumin
1/4 t. cayenne
2 t. sugar
1 1/2 t. kosher salt
Cilantro, for garnish
Directions
1. Place all ingredients, except cilantro, in a crock pot and cook on high for 4 hours.

Crock Pot Apple Oatmeal
Ingredients:
2 c. steel cut oats
4 c. apple juice
4 c. water
6 apples, peeled & cubed
1 t. cinnamon
Directions:
1. Place all ingredients in crock pot and let cook on low for 6-7 hrs. Wake up to breakfast!

Healthi-fried Beans
I love this recipe from allrecipes! The best refried (but not fried) beans you'll ever taste! I lowered the salt and omitted the jalepeno from the original version.
Ingredients:
1 onion, peeled & sliced
3 c. dry pinto beans, rinsed
2 T. minced garlic
1 T. salt
1 3/4 t. black pepper
1/4 t. cumin
9 c. water
Directions:
1. Combine all ingredients in a large crock pot. Cook on high for 8 hours.
2. Take out a couple cups of liquid and mash the beans with a potato masher. Add more liquid if desired.

Crock Pot Teriyaki Chicken

I made this for dinner tonight. Wow! Talk about moist & delicious! Serve it up with some brown rice & steamed veggies and your family will love you.
6 frozen chicken breast halves (boneless & skinless)
3/4 cup sugar
3/4 cup soy sauce
6 tablespoons cider vinegar
3/4 teaspoon ground ginger
3/4 teaspoon minced garlic
1/4 teaspoon pepper
4 1/2 teaspoons cornstarch
4 1/2 teaspoons cold water
Hot cooked long grain rice
Place chicken in a 4 qt. slow cooker. In a large bowl, combine the sugar, soy sauce, cider vinegar, ginger, garlic and pepper. Pour over chicken. Cover and cook on low for 4 to 5 hours or until chicken is tender. Remove chicken to a serving platter; keep warm. Skim fat from cooking liquid. Place liquid in a saucepan and bring to a boil. Combine cornstarch and water until smooth. Gradually stir into liquid and stir until sauce is thickened. Serve over chicken.

Slow Cooker Apple Pie Oatmeal

I made this for the hubby to enjoy this morning. He's been trying to eat healthier since he found out he has elevated cholesterol. So out went the bacon & eggs and in came the oatmeal...everyday. Honestly, even he (who loves oatmeal more than anyone I know), is getting sick of it every single day. So I, like the wonderful wife that I am, found him a new oatmeal recipe. Because everyone should eat more oatmeal, right?
Ingredients:
2 c. steel cut oats
8 c. water
2 c. apple sauce
1 t. cinnamon
1/2 t. nutmeg
1/2 t. cloves
1/2 t. allspice
1/4 c. brown sugar
Directions:
1. The night before, spray your crock pot with some oil. Or better yet, if you have one of those nifty crock pot liner bags, use it!
2. Combine all the ingredients & cook on low for 7-9 hours.
3. In the morning, stir well & serve with your favorite oatmeal garnishes (nuts, raisins, etc.)
